Quinoa & Spinach

1 cup soaked quinoa
1 and 1/2 cup chopped spinach leafs
1/2 diced onion
2 fine diced carrots
oregano, garden herbs
red pepper
cayenne pepper
black pepper
mint
pinch of Hymalian salt
1 tsp. lemon juice
Olive oil

Quinoa & Spinach

Soak quinoa in water overnight or for at least 6 hrs. Rinse quinoa. Place in a saucepan with seasoning, onions and carrot cubes, cover and steam for 10-15 minutes. Turn off the heat. Add fresh baby spinach leaves and stir gently. Add olive oil and lemon juice. Decorate with some cherry tomatoes before serving. Bon appétit.
