Cheesy Kale Chips
2-3 bunches of kale
3 tbl olive oil
1 tbl Himalayan crystal salt
Cheese Topping
Red bell pepper
Juice of 1 lemon
1 tbl Himalayan crystal salt
½ tsp paprika
1 cup cashew nuts
1 tbl nutritional yeast (this gives it more of a cheesy flavor)
Remove the center stalk of the kale (keep them for juicing). In a bowl combine the leaves with olive oil and salt. Massage the leaves with your hands until all leaves are covered. Set aside.
In a blender or food processor, mix the cheese topping ingredients until it forms a smooth mixture. Then pour the topping over the kale leaves and mix again with your hands until all leaves are covered.
Dehydrate at 105°F for 12-18 hours until crispy. (If you don’t have a dehydrator, place kale in the oven on the lowest setting until all leaves are crispy.) These raw cheesy kale chips will make you crazy. Inspired by: Polly Noble
